Kesar Rasmalai Recipe, Instant and soft from milk
Ingredients :
Cow Milk (गाय का दूध ) - 1 lts (for chena )
Full cream (फुल क्रीम दूध ) - 1 ltr (for thickening milk )
Sugar (चीनी ) - 1.5 cup (300 gms) (for sugar syrup )
Sugar(चीनी ) - 1/2 cup (100 gms) (for thickening milk )
Saffron strands (केसर के धागे ) - 25 to 30
Green Cardamom (इलाइची ) - 4
Almonds (बादाम ) - 6 to 7
Cashews (काजू ) - 6 to 7
Pistachios (पिस्ता ) - 15 to 20
Lemon (नींबू ) - 2
How to make Kesar Rasmalai:
1. Take 1 litre cow milk for making chena. Take 1 litre full cream milk in another vessel. Turn on flame. Heat them up.
2. Take cashews, almonds and pistachios and chop them into small pieces.
3. Cut a lemon and extract its juice. approximately 2 tbsp lemon juice,Add 2 tbsp water to it.
4. Take Take a scoop of full cream milk from vessel and add it to the saffron strands ina small bowl.
5. To make cardamom powder grind the cardamoms and peel them.
Making:
6. Once cow milk is boiled, turn off flame, keep on jali stand and let it cool for 3 minutes. Stir the milk in another vessel at every 2 to 3 minutes. Keep flame low.
7. Add lemon juice to cow milk and mix it.Then add some more lemon juice and mix it.Wait for a minute, then stir then again wait. Keep for a while, milk will curdle and become chena.
8.To strain chena, take a big mixing bowl,placed a strainer over it.Then place a clean cloth over it. Pour the milk into it. Lift the cloth from all sides and gather.Squeeze extra water from the chena with hands later.
9. As chena cools, squuze and drain out extra water. Then wash the chena with some cold water to wash off taste of lemon.Squeeze and drain off water again. Take out the chena in a plate.
10. Squash the chena for 4 to 5 minute until soft.Mash with both hands, press it until soft. Then add 1/2 tsp cornflour, mash again for 3 to 4 minutes until soft. Dough is ready.
11. Full cream milk turns dense, cook until 50% dense. Cook for a while. Add a little chopped, cashews,almonds and pistachio to it. Add saffron soaked milk and cardamom powder too.
12. To make sugar syrup, dd 1/2 cup sugar to a vessel, add 4 cup water to it.Turn on flame.Cook until sugar dissolves.
13. To make Rasmalai, break lump from chena and give it a round shape. Press and flatten like a peda then keep in plate.Prepare all likewise.
14. Once sugar syrup is boiling, lift chena and put into sugar syrup one by one. The boiling sugar syrup should keep boiling.Keep the flame high.Cover and cook it on high flame for 15 to 16 minutes.Occasionaly check it by lifting the lid.
15. Once the full cream milk is 50% dense in consistency, then add 1/2 cup sugar and cook until it dissolves. Then turn off flame. Let it cool.
16.When 15 minutes have pass, check if the rasmalai is soft and spongy. Once ready then Turn off flame. Place the rasmalai container over jali stand and let it cool.
17. Pour Thickened milk for rasmalai in a bowl,ake out the rasmalai from the suagr syrup, squeeze off extra sugar syrup and put it in milk bowl.
Serving:
18. To serve it place the rasmalai in a platter,and then pour little milk over it.Garnish with a little pistachio shavings.You can keep Rasmalai in refrigerator and eat it for 2 days.

Ingredients :
Soaked Whole Moth (भीगी हुई मोठ ) - 1/2 cup ( 100 gms )
Tomato (टमाटर ) - 1 ( 100 gms)
Ghee (घी ) - 2 to 3 tbsp
Green Coriander (हरा धनिया ) - 2 to 3 tbsp (finely chopped )
Cumin seeds (जीरा ) - 1/2 tsp
Asafoetida (हींग ) - 1/2 pinch
Turmeric powder (हल्दी पाउडर ) - 1/4 tsp
Coriander powder (धनिया पाउडर ) - 1 tsp
Red chili powder (लाल मिर्च पाउडर ) - 1/4 tsp
Garam masala (गरम मसाला ) - Less than 1/4 tsp
Green chilies (हरी मिर्च ) - 2 ( finely chopped)
Ginger paste (अदरक पेस्ट ) - 1/2 tsp
Salt (नमक ) - Less than 1 tsp or to taste
Baking Soda (बेकिंग सोडा ) - 1 Pinch
How to make Moth Dal :
1. Take cleaned washed Moth dal, soaked in water for upto 7 to 8 hours or overnight.
2. Add dal, add water to cooker, salt, turmeric powder, baking soda Boil dal in cooker until a single whistle.
3. For masala, pour ghee in a pan. Heat it then add cumin seeds. Reduce flame. Add asafoetida, turmeric powder,coriander powder, green chili, ginger paste. Slightly roast the spices.
4. Add tomato puree, followed by red chili powder. Roast the masala till ghee separates from it.
5. Once masala is ready, add dal from cooker to it. Add garam masala, green coriander and mix well.Cover and cook the dal for 2 minutes.
Serving:
6. Take out the Yummy Moth dal in a bowl.Pour some ghee oer it and garnish with green coriander and ginger julienne. Have an enjoyable meal. Relish this dal with roti , Naan or rice.

Ingredients of Sooji Handvo
Semolina (सूजी ) - 3/4 cup ( 130 gms )
Chickpea flour (बेसन ) - 1/2 cup ( 50 gms )
Fresh whisked curd (दही ) - 1/2 cup
Grated carrot (कद्दूकस किया गाजर ) - 1/2 cup
Cauliflower (फूलगोभी ) -1/2 cup ( finely chopped )
Capsicum (शिमला मिर्च ) - 1/2 cup ( finely chopped )
Roasted Peanuts (भुने हुए मूंगफली ) - 2 tbsp
Oil (तेल ) - 3 to 4 tbsp
Turmeric powder (हल्दी पाउडर ) - 1/4 tsp
Red chili powder (लाल मिर्च पाउडर ) - 1/2 tsp
Coriander powder (धनिया पाउडर) - 1 tsp
Curry leaves (करी पत्ते ) - 10 to 12
Ginger paste (अदरक पेस्ट ) - 1 tsp
Green chilies (हरी मिर्च ) - 2 to 3 ( finely chopped )
Eno fruit salt ( इनो फ्रूट साल्ट ) - 3/4 tsp
Salt (नमक ) - more than 1 tsp or to taste
Black mustard seeds (काले सरसों के दाने ) - 1 tsp
Sesame seesds (तिल ) - 1 tsp
Cumin seeds (जीरा ) - 1/2 tsp
How to Make Sooji Handvo
1. Take semolina in a mixing bowl, add chickpea flour, fresh whisked curd. Mix all. Add water and prepare dense dough.
2. Once dense batter is ready, add spices such as turmeric powder, red chili powder, coriander powder, ginger paste, finely chopped green chili, more than 1 tsp salt, mix all ingredients well.
3. Add veggies such as grated carrot, finely chopped cauliflower, finely chopped capsicum, roasted peanuts. Mix all ingredients. if batter seems dense add water. Keep batter aside to set for 10 minutes.
4. Once 10 minutes pass, put pan to heat. Add eno fruit salt to Handvo batter, mix it. Meanwhile add 2 to 3 tbsp oil to the pan.
5. Once oil is rightly hot, add black mustard seeds. Reduce flame, add cumin seeds, sesame seeds, saute it. Put handvo batter in pan, spread evenly. Cover and cook the handvo on low medium flame for 10 minutes.
6. Check the Handvo, if roasted from beneath and dark from above , flip it in a thali.
7. To roast other side, add the leftover oil. Then add sesame seeds, cumin seeds, mustard seeds, slightly roast spices. Put handvo in pan, sesame seeds, cumin seeds, mustard seeds. Cover and cook it on low medium flame for 12 minutes.
8. Check Handvo, place thali and flip handvo likewise. Handvo is roasted well.
Serving :
9. Soft and puffy Handvo is ready to be served. Relish it anytime for breakfast or as snack.

Instant Rava appams or Semolina Appe prepared with sooji and veggies are so devouring that everyone just love having them. This quick to make snack can be served in breakfast or in supper with any chutney or dip.
Ingredients
Semolina – ½ cup (100 grams)
Curd – ½ cup (whisked)
Oil – 2 tbsp
Green peas – ¼ cup
Cauliflower – ¼ cup (finely chopped)
Green chilly – 1 finely chopped
Ginger – ½ inch baton (1 tsp paste)
Salt – ½ tsp or to taste
Mustard seeds – ¼ tsp
Curry leaves – 7 to 8 (chopped)
Baking soda – ¼ tsp
Directions
Getting ready:
1.Take semolina in a big mixing bowl.
Making:
2.Now add whisked curd to it and mix really well.
3.To the batter add finely chopped cauliflower, peas, finely chopped green chilies, ginger paste and salt. Mix everything really well. If the batter appears to thick then add some water to it.
4.Cover and keep the batter aside for 10 to 15 to rest. Use it later to make appams.
5.Batter is now ready. Add mustard seeds to it. For this, heat 1 tsp oil in a small wok or pan and add mustard seeds to it. When the seeds splutter, add curry leaves into it. Saute for a while.
6.Pour this tempering to the batter and mix well.
7.Now in the end, add baking soda to the batter and mix gently. Don’t over whisk the batter.
8.Preheat an appam maker and pour little oil in its each mold.
9.Fill each mold with the batter.
10.Cover and let them simmer for 3 minutes on low-medium flame.
11.When the appams get golden brown from beneath, flip the side and continue cooking until golden brown from this side as well. It can take 2 minutes. Cook the appams until they get golden brown on both the sides.
12.Take out the roasted appams in a plate and similarly prepare the rest as well.
Serving:
13.Scrumptious and mouth drooling rawa appams are ready. Serve them steaming hot with green coriander chutney, sweet chutney, tomato sauce or any other chutney as per your desire and taste and relish eating.

Ready-mix Gulab jamun
Ingredients:
Ready-mix gulab jamun - 1 packet (175 gms)
Sugar - 3 cups (800 gms)
Green cardamoms powder - 4
Ghee - for frying
How to make ready-mix Gulab jamun
For the dough
1- Take 1 packet of the ready-mix gulab jamun mixture and pour it in a bowl.
2- Add some less than 1/2 cup water in it and mix
3- Apply some ghee on your palms and knead the smoother dough.
4- Cover and keep it aside for 10 minutes
For sugar syrup
1- Add 3 cups of sugar, 3 cups of water and cook until sugar dissolves in it.
2- Stir it in the intervals and its consistency should be slightly sticky.
3- Add 4 crushed green cardamoms and leave the sugar syrup for 2 to 3 minutes to boil.
4- After, 3 minutes the sugar syrup has cooked.
For gulab jamun
1- Melt ghee in a wok.
2- Apply some ghee on your palms and again, knead the dough.
3- Divide it into the smaller sized dough lumps.
4- Grease your hands with ghee, take a dough lump and roll it.
5- Prepare a smooth round ball there shouldn't be any cracks in it.
6- Prepare the balls and place them on the plate.
7- Put a piece of some dough in the heated ghee to check its temperature.
8- Moderately heated oil is required to fry the gulab jamuns.
9- Add the gulab jamuns to fry on the low flame.
10- Flip them once they have fried from the bottom.
11- Stir the ghee to rotate the gulab jamun and fry until they are golden brown.
12- Now, we can stir them directly using the ladle.
13- Drain them out once they are golden brown from all the corners.
14- Add the Gulab jamuns in the warm sugar syrup.
15- It takes 8-9 minutes to fry one round of gulab jamuns
16- Dip the gulab jamuns properly in the sugar syrup for 4 hours.
17- The gulab jamuns have absorbed the sugar syrup and they are ready to be served.
Suggestions:
1- Threaded sugar syrup isn't required for this recipe.
2- We took ghee to fry the gulab jamuns but, you can use the refined oil also.
3- You can increase and decrease the quantity of gulab jamun according to your choice.
4- Never place the ladle directly over the gulab jamuns.

Ingredients for Kaju Katli
Cashew nuts (काजू ) - 2 cup ( 300 grams)
Sugar (चीनी ) – ¾ cup ( 150 grams)
Ghee (घी ) – 2 tbsp
Cardamom Powder (इलाइची ) - ½ tsp
How to make Kaju Katli Step by Step
1. Take 2 cup cashew chunks,in mixer jar, grind it. Don’t run the mixer for too long make powder. Transfer it in a separate bowl.Strain this powder through a sieve so that big chunks are separated. Keep the bigger chunks separately and grind again later.
2. To prepare dough from cashew powder. Add ¾ cup of sugar and add ¾ cup of water into the pan. Let sugar dissolve.
3. Add cashew powder to it. Keep the flame low and stir while roasting. Cook until it gets dense in consistency.
4. Once dense add ½ tsp cardamom powder and 2 tsp ghee into it. Mix thoroughly and continue cooking until it gets thick in consistency.
5. To check the desired consistency of paste, take some paste in a spoon and let it cool. Then check if it can be turned into a round dough ball.Then it is ready. Turn off the flame and stir the paste for a while.
6. Grease a plate with some ghee and transfer the paste to it Keep the flipping the sides of paste.
7. Grease a butter paper with some ghee. Keep flipping the sides of paste.
8. Grease hands with some ghee and roll the paste. Place rolled ball over the butter paper and flatten with your hands. Roll it out thinly, 3 to 4 cm thick giving a square shape.
9. Place the sheet in over a tray and place inside the refrigerator to set then cut out the katlis from it.
10. Once the katli has set, take a scale and cut the sheet into diamond shape marking 1.5 inch on the sheet.
Serving:
11. Let it dry a bit, then separate it with a knife. Tempting Kaju Katli is ready. It can be prepared for any festival, party or anytime we crave for something sweet. You can store it in a refrigerator and eat it for 1 month.

Ingredient:
Chickpea flour (बेसन ) - 1 cup (100 gms)
Ghee (घी) - 1/2 cup (100 gms)
Sugar (चीनी ) - 1/2 cup (100 gms)
Milk (दूध ) - 2 cup (400 ml)
Almonds (बादाम ) - 10 to 12 (finely chopped)
Cashews (काजू ) - 10 to 12 (finely chopped)
Pistachios (पिस्ता ) - 10 to 12 (finely chopped)
Green Cardamom (इलाइची ) - 6 to 7 (powder)

Making:
1. Put a pan to heat. Turn on flame. Add 1/2 cup ghee. When ghee heats up add 1 cup Chickpea flour. Roast the chickpea flour until it is golden brown in color.Keep medium flame. It takes 15 minutes to roast the chickpea flour.
2. Add 1/2 cup sugar to it. Roast for 2 to 3 minutes more while stirring it. Roast the chickpea flour for 4 minutes more ,while stirring it. Chickpea flour has turned dark. Now add milk to it. Stir and cook it on low flame. Dissolve the lumps.
3. Now add a little chopped almonds, chopped cashews,green cardamom powder. Then add 2 tsp ghee to it. Mix it well. Turn off flame. Take it out in a plate.
Serving :
4. Besan Halwa tastes mouth drooling.Add a little almond and cashew shavings and garnish it. This quantity of halwa is sufficient for 3 to 4 members of family.
You can store the besan halwa in refrigerator and eat it for a week. Prepare Besan Halwa on any special or festive occasion.
