Crispy, flaky deep fried wheat flour mathris taste super delicious and tempting.
Ingredients
Wheat flour – 1 cup (200 grams)
Semolina – ¼ cup
Oil – ¼ cup
Oil – for frying mathris
Carom seeds – 1/3 tsp
Cumin seeds ½ tsp
Black pepper – 1/3 tsp (crushed)
Directions
Getting ready:
Strain the wheat flour through a sieve.
Making:
Take the following ingredients in a big mixing bowl – wheat flour, semolina, carom seeds, cumin seeds, black pepper, salt and oil. Mix everything really well.
Now add water in small portions to knead stiff and tight dough. Cover and keep the dough aside for 15 to 20 minutes to set.
Now knead the dough again until smooth and soft. Then pinch small lumps from the dough.
Lift one dough ball at a time and flatten it slightly with your hands. Place on a rolling board and roll out into 2 inch diameter thick round.
Prick the rolled mathri with a fork and likewise prepare the rest as well.
Heat enough oil in a wok and place as many mathris as possible at once in the medium hot oil. Now deep fry the mathris until golden brown and crispy from all sides.
Drain out the fried mathris on kitchen paper towels and fry the rest.
Tempting namkeen mathri is ready.
Serving:
Let them cool down completely and then store in air tight container. These keep good for 2 months.
Have these yummy mathris with piping hot cup of tea or coffee.

आवश्यक सामग्री - Ingredients for Rava Meethi Mathri Recipe
सूजी - 1 कप (200 ग्राम)
गेहूं का आटा - ¼ कप से थोड़ा ज्यादा (50 ग्राम)
चीनी पाउडर - ½ कप (75 ग्राम)
तेल - ⅓ कप
दूध - ½ कप
इलायची - 4 (पाउडर)
तिल - 1 टेबल स्पून
तेल - तलने के लिए
How to make Semolina Sweet Mathri
For the dough
Take 1 cup of semolina in a bowl and add ⅓ cup of wheat flour to it. Add 1 tablespoon of sesame seeds to it along with powder of 4 green cardamoms. Add ½ cup of powdered sugar to it and mix them properly.
Add 6 tablespoons of oil to the mixture and mix them together. Add ½ cup of warm milk to the mixture and knead to make a soft dough from it. Cover the dough for 20 minutes to set it.
After 20 minutes, mash the dough for 2-3 minutes. Preheat oil for frying in the wok. Take a flattening board and apply some oil over it to grease it.
Divide the prepared dough into two equal halves and roll a proportion of dough between your palms. Flatten the proportion of dough into the diameter of ¼cm on the flattening board by applying pressure over it.
Take a cookie cutter after flattening the dough lump and press it over the dough to cut the cookie shaped Matris.
Prick the Matris from both sides using a fork so that they won’t expand while frying. Prepare all the Matris likewise.
The less heated oil and the low-medium flame is required to fry Matris. Add Matris in the wok according to its capacity to fry. Fry Matris til they appear golden brown from both sides. Flip and fry them till their colour changes.
Drain out the fried Matris because their colour has changed using a ladle. Fry all the Matris likewise and a single round of Matris take 4-5 minutes to fry. You can make 20-25 Matris from the prepared amount of dough.
Suggestions
You can take thicker sized semolina instead of finer sized semolina. If you are using thicker sized semolina then, add increase the quantity of wheat flour.
Take sugar ⅓ the quantity of wheat flour. Do not increase the amount of sugar excessively otherwise Matris will split while frying.
If oil is excessively heated then, Matris will fry from the outside but, they will remain raw from the inside.

Refined flour (मैदा ) - 2.5 cup ( 300 gms)
Ghee (घी ) - 1/2 cup ( 100 gms )
Sugar (चीनी ) - 2.5 cup ( 500 gms)
Pistachios (पिसते ) - 15 to 20
Green Cardamom (इलाइची ) - 6
Saffron strands (केसर के धागे ) - 30 to 40
Baking Powder (बेकिंग पाउडर ) - 1 tsp
Ghee (घी ) - For frying
How to make Balushahi
Direction :
Getting ready :
1.Add cardamom to the apparatus and peel it and grinds it. Take 30 to 40 saffron strands,Add a little water so that the saffron gives off color.
Making :
1. Take 2.5 cup refined flour. Add 1 tsp baking powder to it. Mix well.Add ½ cup ghee to it.Mix well again.Add water in small portions to make dough. Make sure you just bind it. Keep it aside for 10 to 15 minutes to set.
2. To prepare sugar syrup, take 2.5 cup sugar in a vessel, add 1.25 cup water to it. Turn on the flame.Cook until the sugar dissolves in water.Stir it at regular intervals check it. The last drop of sugarsyrup should form a single thread. When sugar syrup is ready,Turn off the flame.Add cardamom powder to it, add the soaked saffron to it stir once,. Place the sugar syrup over a jali stand.Cover and keep it, so that it doesn’t cool down quickly.
3. 20 minutes are done, dough is set and ready. Squash it slightly, Keep dough layered. Break the lump of dough Make a log from it. Make small balls, meanwhile heat up a wok with ghee.
4. To shape the balushahi, Lift a dough ball.Give it a round shape.Press it and make a hollow from one side. Lift a dough ball.Give it a round shape.Press it and make a bit hollow from both side. Place the shaped Balushahi in a plate.Make all the Balushahi likewise.
5. Check if ghee is sufficiently hot, You need less hot oil like to fry the Balushahi. Put the Balushahi to fry. Fry on low flame, when they float over the ghee, when golden brown from below, flip them. Slightly increase flame and fry well until golden brown from all sides. When fried and ready, take it out.Hold the Balushahi over the ladle ,so that the extra ghee drains back to the wok. Keep it in a plate.
6. Take out the Balushahi and drop it in sugar syrup.Dip it.
7. If the ghee seems too hot then then turn off the flame for 2 to 3 minutes and let it cool. Turn on flame, put the Balushahi to fry. Meanwhile Take out the balushahi dipped in sugar syrup.Keep it in a separate plate.
8. All the balushahi are fried and ready. It takes 20 to 21 minutes to fry balushahi at once. 21 Balushahi are ready with this quantity of dough.
9. To garnish place Balushahi in a plate. Garnish with pistachio shavings.Balushahi can be stored in refrigerator and eaten upto 15 days.

Green Grams - हरी मूंग या हरी मूंग दाल - 1 Cup (200 grams)
Jaggery - गुड़ - 160 gms
Desi Ghee - घी - 4-5 tbsp
Almond Flakes - बादाम कतरन - 1/4 Cup
Cashew - काजू - 8-10, chopped
Cardamom - इलाइची - 4, coarsely ground
How to prepare green moong dal ladoo?
1. Roast 1 cup of green moong dal over medium heat till the color changes lightly.
2. Once ready, take them out on a plate and allow them to cool.
3. Dash 1 cup of jaggery into pieces and melt it with 2 tbsp water.
4. Grind the lentils into a fine flour once cool down.
5. Add 2 tbsp of ghee to a pan and roast over low-medium heat.
6. Add 2 more tbsp of ghee and roast the mixture for 2 more minutes.
7. Add 8-10 chopped cashews, 1/4 cup of almond flakes, and roast the mixture a little more.
8. After 2 mins of roasting, add 4 crushed cardamoms and transfer the mixture to a bowl.
9. Mix the moong dal mixture and jaggery syrup.
10. Wash your hands and apply a little ghee before preparing laddoos.
11. Take out the mixture and bind it like ladoo.
12. Prepare all the laddoos and green moong ladoos are ready.

Black peppercorn – 10-12

Directions
Getting ready:
1.Wash tomatoes and chop them in rough chunks.
2.Peel the ginger and chop it as well.
Making:
3.Heat 2 tbsp of oil in a pan. Splutter fenugreek seeds and cumin seeds into hot oil.
4.Then add mustard seeds and stir them for a while. Further add asafoetida, coriander powder and roast them.
5.After that add chopped tomatoes, ginger, salt, whole red chilly and black peppercorns. Mix everything really well.
6.Cover the pan and cook it for 5 minutes. Check at regular intervals.
7.After 5 minutes, remove the cover. Keep stirring and let it cook for 5 more minutes.
8.Tomatoes are now cooked through. Now cook it on high flame for about 1-2 minutes. Turn off the flame and let the tomato mixture cool down completely.
9.After that put the mixture in a mixture jar and prepare a fine paste of it.
10.Transfer the prepared tomato chutney into a bowl.
11.Again, heat some oil and splutter mustard seeds.
12.Turn off the flame and add 1-2 pinch of red chilly powder to it.
13.Pour the tempering on the tomato chutney. Tangy tomato chutney is ready to serve.
Serving:
14.Serve this mouth-watering and delectable tomato chutney as a side assortment with dosa, idli, paranthas or any meal. Store the remaining in refrigerator for a week and relish eating.

Ingredients for Rice Flour Masala Paratha
Rice Flour - चावल का आटा - 1 Cup (160 grams)
Cumin Seeds - जीरा - 1/2 tsp
Oil - तेल - 1 tsp
Salt - नमक - less than 1/2 tsp
Desiccated Coconut - नारियल का बुरादा - 1 tbsp
Ginger - अदरक - 1 tsp, grated
Green Chilli - हरी मिर्च - 1 tsp, finely chopped
Coriander Leaves - हरा धनिया - 1-2 tbsp
How to prepare rice flour masala paratha?
1. Add 1 cup of water, less than 1/2 tsp of salt, 1/4 tsp of cumin seeds, and 1 tsp of oil to a vessel and bring the water to a boil.
2. After a boil, turn off the flame and mix rice flour in the water. Cover and leave the dough for 5 minutes.
3. Take the flour out in a big bowl. Mash and mix the mixture with a spoon.
4. Add 1 tbsp of desiccated coconut, 1 tsp of grated ginger, 1 tsp of green chilies chopped, and 1-2 tsp of green coriander leaves to the mixture.
5. Once the mixture cools, mix and knead everything into a dough. Apply oil to your hand and prepare a smooth dough. cover and keep it aside for 15 minutes.
6. Apply a little oil to your hands and knead the dough again. Take a dough portion and cover the rest from drying.
7. Dust the dough with dry rice flour and roll out a big and slightly thick sheet.
8. Spread ghee over the Tawa and add paratha. Roast the paratha over medium flame till brown spots appear.
9. Spread ghee over the top of the Paratha, flip around, and apply ghee on the flipped side. Fry the paratha till brown spots appear on both sides.
10. Rice flour masala paratha is ready to be served.

धनिया पाउडर - Coriander Powder - 1 tsp
जीरा - Cumin Powder - ½ tsp

How to make Aloo Kachori
1. In a bowl add 2 cups (250 grams) of all purpose flour, ½ tsp of salt, ½ tsp of carom seeds (crushed) and ¼ cup of oil for moyan and mix well. Add water little by little and prepare a soft dough by kneading it. Keep it covered for 20 minutes.
2. Peel 3 medium sized boiled potatoes and mash them very finely. Now put 1 tbsp of oil in the pan and heat it. Then add 1 tsp of grated ginger, 2 finely chopped green chillies, 1 tsp of coriander powder and ½ tsp of cumin powder and fry lightly on low flame.
3. Then add ¼ tsp of turmeric powder and fry the spices, add mashed potatoes and mix the spices with the potatoes and fry them well.
4. Turn up the flame to medium, add ½ tsp of salt, ½ tsp of red chilli, ½ tsp of garam masala and ½ tsp of dry mango powder. Now fry the potatoes well for 2-3 minutes and mix all the spices well. Add some green coriander and mix, the stuffing for the kachori will be ready.
5. After the time of keeping the dough is over, take a little oil in your hand and mash it a little. Break the dough and make medium sized balls. Make a good round shape by pressing it lightly in the middle and make it thin from the edges.
6. Now put 1 tsp of stuffing in it and close it. Close the dough tightly and pull the dough a little and break it a little and press it from the middle. Filling the kachoris will be ready, similarly fill all the kachoris.
7. Heat oil in a pan, remember that the oil should not be too hot. Make a kachori a little bigger by pressing on the hand. After doing the same from all the sides, put the kachori in the oil. While pressing the kachori on the palm.
8. Now fry the kachoris for 5 minutes and when they float on their own, then turn the flame to low-medium and fry them till they turn golden brown. After roasting well, take them out and make the rest in the same way. In this way potato crispy kachoris will be ready, serve them with green coriander chutney and enjoy their taste.

सूजी - Semolina - ¾ Cup (135 grams)
आलू - Potato - 2, boiled

Ingredients :
Petha Fruit (पेठा फल ) - 2 kg
Sugar (चीनी ) - 5 cup ( 1kg 200 gms)
Limestone (चूना ) - 2 tsp or 1 tsp Fitkari
How to make Petha :
1. Take a ripe petha fruit, remove the soft pulpy part, peel the green skin, cut all it into smaller pieces. Poka ll pieces with fork.
2. Take 2 litre water in a vessel, add limestone to the water and stir it.Put the Petha pieces in limestone water. Keep it for 10 to 12 hours.
3. Then drain the limestone water, wash off the petha pieces well. Keep in a plate.
4. Pour 2 litre water in vessel to boil the pethas. Add pethas. Boil them on high flame for 20 minutes.
5. Petha is boiled well and ready, take out the pethas from water and keep in strainer,then keep in plate.
6. Take some sugar, add water to it, cook till sugar dissolves. Stir at regular intervals. Add the petha pices to sugar syrup, cook until dense on high flame.
7. When syrup is of desired consistency then, Pick it up and keep to cool. Let pieces stay in syrup for 6 to 7 hours or overnight.
8. After 12 hours, petha has released juice, cook it again until dense. Stir at regular intervals and cook it on high flame.
9. When dense, lift and keep the petha pieces over the net. Arrange all and keep under the fan to dry for few hours.
Serving:
10. Agra's famous Petha sweet is ready. Fill petha in a container, keep outside fridge and relish it for upto 2 months.
